ZUCCHERO CANADA · SOCIAL RESPONSIBILITY
Cacao with a purpose.
From the farms we source from to the professionals we serve — how Zucchero works with origin communities and single-origin producers.
OUR COMMITMENT
How we give back.
Our commitment to cacao origin communities, traceable sourcing, and preserving ancestral cacao varieties.
Our relationship with cacao begins at origin
At Zucchero Canada, our work with cacao doesn't start at our warehouse — it begins in the field. We maintain direct relationships with cacao producers in Venezuela, Ecuador, and Peru, selecting beans from estates, cooperatives, and farming families who prioritize quality, traceability, and respect for the land.
Direct from the source
By working directly with producers, we help ensure farmers receive fairer value for their harvests — bypassing the commodity supply chain that historically undervalues specialty cacao.
Every bean we import carries the story of its origin:
- Río Caribe Superior (Venezuela) — Coastal cacao with floral and red fruit notes
- Sur del Lago Criollo (Venezuela) — Ancestral Criollo lineage from the Lake Maracaibo region
- Gibraltar Criollo (Venezuela) — Rare Criollo variety from the Venezuelan Andes
- Carenero Superior (Venezuela) — Classic Trinitario from the Barlovento region
- Hacienda Victoria (Ecuador) — Fine-flavor cacao from the Ecuadorian coast
- Ucayali (Peru) — Amazonian cacao with fruit-forward complexity
Supporting cacao communities
Through our sourcing partnerships, we support producer cooperatives and farming families working to improve their livelihoods. Our ongoing commitments include:
- Paying premium prices for high-quality, well-fermented beans
- Supporting producer-led investments in post-harvest infrastructure (fermentation houses, drying facilities)
- Partnering with producers who invest in farming education and agricultural best practices
- Committing to long-term purchase relationships that give farmers stability
Preserving ancestral cacao
Criollo cacao — the rare, genetically ancient variety native to South America — represents less than 1% of global cacao production. Many Criollo lineages have been lost over the past century due to disease, mass-market hybrid cacao planting, and economic pressure on farmers to grow higher-yielding but lower-quality varieties.
By sourcing from producers who cultivate and preserve ancestral Criollo lineages, we help ensure these genetic treasures — and the unique flavors they produce — are not lost to history.
Why this matters for chefs
When you buy single-origin cacao from Zucchero Canada, you support a shorter, fairer supply chain. You help preserve rare cacao cultivars. And you give chocolatiers and pastry chefs access to true terroir — beans with a name, a place, and a farmer behind them.

Transparency commitment
We believe honesty matters more than marketing claims. We do not currently hold third-party certifications like Organic, Fair Trade, or Rainforest Alliance — but we maintain direct relationships with the producers whose beans we import, and we can share origin documentation for any bean we sell.
