About this ingredient

Sourced at origin — crafted for professionals.

Gibraltar cocoa beans are raw, fermented fine-aroma beans from the town of Gibraltar in Zulia state, Venezuela, near the shore of Lake Maracaibo, for bean-to-bar makers and chocolatiers.

They are Trinitario with 50–60% Criollo genetics, graded Premium (F1), fermented 5–6 days in traditional wooden boxes and slowly sun-dried for 7 days in wooden drawers. Beans are almond-shaped and of varied size. Expect yellow fruits, caramel, nuts and a hint of tobacco. Peak harvest runs December to February, mid-crop July to September.

Warning: raw cocoa beans must be properly roasted before consumption. Do not eat raw.

Unique

I processed this bean into chocolate following The Chocolate Alchemist's process. Flavor-wise, it gets more into the extremes. I found it particularly astringent, with a moderate bitterness and pronounced earthiness and acidity. There was virtually no fruitiness or natural sweetness. Friends told me that it was reminiscent of an espresso shot (tasting at 80% dark). I found it similarly "coffee-like". It's actually great when used in hot chocolate with a bit of added sugar, the astringency adds intrigue.

Hi Cory, thank you for your feedback! We're glad to hear that you found our Cocoa Beans Gibraltar unique and enjoyed experimenting with them in your chocolate-making process. We appreciate your detailed description of the flavor profile and how it reminded you of an espresso shot. We agree that the astringency adds an interesting dimension to hot chocolate. Thank you for trying our product and we hope you continue to enjoy it!
