The XF52 Elliptic Viennoiserie Ring is a micro-perforated stainless steel band from the viennoiserie collection Pavoni Italia created with French pastry chef Johan Martin. Use it to bake shaped viennoiserie with a elliptic outline, 125 × 74 × 45 mm (4.92 × 2.91 × 1.77 in) inside.
Pavoni designed these bands so the pastry bakes evenly and unmolds easily, giving every piece the same clean elliptic profile batch after batch.
