About this mat
Perfect release, perfect shape — every single time.
The Formasil Éclair FF13 is a Pavoni Italia micro-perforated, non-stick silicone mat of 600 × 400 mm (23.62 × 15.75 in) with twenty-four éclair indents of 125 × 25 × 5 mm (4.92 × 0.98 × 0.20 in), so every éclair is piped to the same size and shape.
The micro-perforations distribute heat evenly and let the choux dough grip the mat for a good rise and a perfect bake; the outlines on the mat guide the piping. Pavoni's method: place the mat on a micro-perforated baking tray, fill the indents with a piping bag and bake. Like all Pavoni Italia silicone, it is dishwasher safe.
