The SPV64 non-stick silicone mat by Pavoni Italia measures 585 × 385 mm (23.03 × 15.16 in) and works for both baking and freezing.
SPV is Pavoni's iconic mat line, "indispensable in every pastry shop": each mat is glass fibre coated on both sides with food-grade silicone, and is used in patisseries, ice-cream parlours and restaurants. Pavoni also lists the SPV64 among the accessories of its sugar heating lamp, as the work mat for sugar.
