Step-by-step: professional shortcrust biscuits
This plain sweet shortcrust ("frolla neutra") was developed by pastry chef Yuri Cestari for Pavoni Italia. Quantities are exactly as published.

- Bring the butter to about 15°C.
- Sand the dough. In a stand mixer with the flat beater, combine the flour, rice flour, starch and butter until the mixture has a sandy texture.
- Add the sugar and continue mixing.
- Add the eggs with the salt dissolved in them and mix just until combined.
- Rest in the fridge so the fat crystallises.
- Work, shape and cut. Beat briefly with the hook, shape, and cut with a grid or cutter.
- Bake. Pavoni's tested settings for this dough are for its Cookmatic machine (170°C for 270 seconds, 12 g of dough per piece). For a deck or convection oven, bake a test tray first and record your own time and temperature.
