Sur del Lago Ancestral Criollo Lineage is a 71% dark couverture crafted by Bassan Chocolate from carefully selected Venezuelan cacao. Sourced from Trinitario beans with ancestral Criollo lineage and processed in Canada using a structured cacao approach, it delivers exceptional consistency across batches. The result is a smooth, velvety texture with delicate notes of fruit, wood and nuts — low in acidity and astringency.

Ideal for ganaches, moulded bonbons, tablets, entremets and chocolate beverages. Available in 1 kg bags for small-batch work, 5 kg bags for regular production, and 20 kg cases for high-volume operations.
