About this mat

The Forosil Éclair mat ECL48 is a Pavoni Italia micro-perforated, non-stick silicone mat of 600 × 400 mm (23.62 × 15.75 in) printed with 48 éclair outlines of 60 × 18 mm (2.36 × 0.71 in), so every éclair is piped to the same size.
The micro-holes distribute heat evenly and let the choux dough grip the mat for a good rise and a perfect bake. Pavoni's method is simple: put the mat on a micro-perforated tray, pipe the dough along the outlines, and put the tray in the oven.
