About this flour

The baguette flour of French tradition.

The crackling crust and open, creamy crumb of a true French baguette — that's what Bagatelle T65 was milled for. This is the bread flour of French tradition: strong enough for long fermentation, tolerant in hydration, and consistent bake after bake.

Milled in France by Foricher Les Moulins from 100% CRC®-certified French wheat, with the balanced profile artisan bakers ask for — more than 11% protein, W200 — so your dough behaves the same way every single day.

Reach for it for baguettes tradition, pain de campagne, rustic loaves and sourdough — whether you run a bakery or you're chasing that Paris crust at home.

FLOUR GUIDE

French flour types, decoded.

Croissants, baguettes or wholesome home loaves — the T number tells you which flour does the job. Compare French types with their closest Italian equivalents and find your match.

French flour types T45 T55 T65 T80 T130 T150 compared with Italian equivalents Tipo 00 Tipo 0 Tipo 1 Tipo 2 rye and whole grain, with ash content and best uses for croissants, baguettes, pastry, country breads and healthy whole-grain breads
French type Italian equivalent Character Best for
T45 Tipo 00 Ash ≤ 0.50% · finest, whitest Croissants, viennoiserie, brioche
T55 Tipo 0 Ash ~0.55% · fine, versatile Pâtisserie, puff pastry, tarts
T65This flour Tipo 1 Ash ~0.65% · stronger, rustic crumb Baguettes, artisan breads
T80 Tipo 2 Ash ~0.80% · semi-whole, creamy tone Pain de campagne, sourdough country breads
T130 Rye (segale) Ash ~1.30% · dark rye Rye breads, pain de seigle
T150 Integrale Ash ≥ 1.40% · whole grain, high fiber Whole-grain, high-fiber healthy breads

The T number is the flour's mineral (ash) content × 100 — the lower the number, the whiter and finer the flour; the higher, the more whole grain, fiber and flavor it keeps.

I am writing to express my deep disappointment regarding a recent order I received from you a few days ago.Upon opening the 25 kg bag of French flour, I noticed numerous yellow spots throughout the dry powder. Furthermore, I discovered many hard spots of flour clumps, particularly at the corners of the bag, which clearly indicate that the product was exposed to moisture before or during transit.I initially attempted to work with the product, but after using 7 kg, the results were completely unsatisfying. Because of the moisture damage and discoloration, I had to discard most of the dough I made. This is a severe quality control issue, and I am very unhappy and disappointed with the condition of this flour. I cannot use the remaining 18 kg left in the bag.Due to these circumstances, I am requesting a full refund for this order and instructions on how to return the remaining flour back to you.I look forward to your prompt response to resolve this issue.Sincerely

Dear Sheni,

We sincerely apologize for the condition of the flour and the inconvenience this caused.

The small yellow spots may occasionally appear because the flour is enriched with the vitamins and minerals required for white flour sold in Canada. In some cases, these ingredients may not be distributed completely evenly and can appear as small yellow particles. However, the hardened clumps are not normal and may indicate exposure to moisture.

We issued a full refund and advised that there was no need to return the remaining flour. We are also following up with the manufacturer, as this does not reflect our usual quality standards.

Kind regards,

The Zucchero Canada Team

Amazing Customer Service

After returning from a trip, I decided to try French flour for bread. 🥖 I only needed the small bags (2.2 lbs I think) which were sold out. I requested notification when the flour was restocked. Two folks let me know when the flour was in! Amazing customer service!

Great service, great product

Kati was very nice and helpful. Picking up the product was very easy however, the location was a little bit confusing. The price of the product was a bit more expensive online than what I'm used to paying.
Regardless, I will definitely be in touch with Kati to buy more product in the future
