Best Chocolate Tempering Machines for Home Use and Small Businesses in Canada

8 min readUpdated

Short answer: for home use and a small chocolate business in Canada, the best tempering machine is the one that matches your outlet and your volume. On a standard 110 V outlet, the Pavoni MiniTemper is the automatic choice: a 3 kg bowl, five programmable presets, and an interchangeable bowl to change chocolate fast. If you are happy to seed by hand, a Martellato Digital Meltinchoc melts and holds dark, milk and white chocolate at tempering temperature for less. When you sell every week and have a 230 V supply, a continuous machine such as the Bilait Adam K6 keeps chocolate in temper for whole production days.

Quick answer: which machine for which kitchen

Your situation Machine Price
Home kitchen, small batches, you seed by hand, 110 V Martellato Digital Meltinchoc 3.6 L $1,150.00 CAD
Home or small business, more chocolate per session, 110 V Martellato Digital Meltinchoc 6 L $1,259.99 CAD
Automatic tempering at home or in a small workshop, 110 V Pavoni MiniTemper 110V $3,350.00 CAD
Small batches including your own bean-to-bar chocolate, 230 V Chocolate World Easy Temp, 3 kg $6,775.00 CAD
Continuous tempering in a small footprint Pomati T5, 5 kg $11,650.00 CAD
A growing business that will add dosing and enrobing, 230 V Bilait Adam K6, 6 kg $10,990.00 CAD

For the Easy Temp, the T5 and the Adam K6, ask us about availability and delivery time before you order.

What to check before you buy a tempering machine for home use

Four questions decide the machine: your outlet, how much chocolate you work per session, how often you change chocolate, and whether you want the machine or your own hands to do the seeding.

  • Your outlet. Check the voltage on the manufacturer's sheet, not the marketing name. Our MiniTemper and Meltinchoc units are 110 V versions. Chocolate World lists the Easy Temp at 230 V single-phase (ask us about a 110 V version), Bilait lists the Adam K6 at 230 V, and Pomati's datasheet lists the T5 at 240 V single-phase, with special voltages on request. A 230/240 V machine needs a matching supply: have an electrician check yours before you order.
  • Capacity. The tank or bowl size tells you how much chocolate is ready at once: 3 kg for the MiniTemper and the Easy Temp, 5 kg for the T5, 6 kg for the Adam K6.
  • Changing chocolate. If you work dark, milk and white in the same day, look at how the machine empties: an extra bowl on the MiniTemper, a removable auger on the T5, a reversible auger on the Adam K6.
  • Who seeds. A Meltinchoc tells you when to seed and then holds the temperature; you do the seeding. An automatic machine runs the cycle and holds the chocolate in temper for you.

Martellato Digital Meltinchoc: tempering by hand, with the temperatures held for you

The Digital Meltinchoc is a melter with three preset programs for dark, milk and white chocolate; it guides you through tempering, but you seed the chocolate yourself.

According to Martellato's handbook, it melts the chocolate to 45°C (113°F), shows a symbol when it is time to seed, then lowers and holds the chocolate at 31°C (88°F) for dark, 29°C (84°F) for milk and 28°C (82°F) for white. Our units run on 110 V, with PID control, an integrated probe and a removable stainless-steel tank, in 3.6 L and 6 L sizes, each with a 145 mm scraper. For a home chocolatier who already knows how to seed, it is the least expensive machine in this guide that holds dark, milk and white chocolate at their tempering temperatures.

Pavoni MiniTemper: the automatic tempering machine for home use on 110 V

The MiniTemper tempers automatically, and ours is the 110 V / 60 Hz North American version, so it plugs into a standard outlet.

Pavoni describes it as a small, simple bench tempering machine that keeps chocolate tempered for several hours with its customisable programs. Pavoni's catalogue lists a 5 L / 3 kg bowl, 300 W, 16 kg, with an AISI 304 stainless-steel body and bowl and a transparent lid. Our 110 V version has five programmable presets (Pr1–Pr5), each with three stages (melt, crystallise, harden), set between 20°C and 60°C (68–140°F) in 0.5°C steps. The bowl is interchangeable: with an extra bowl you can switch from dark to white without stopping to clean.

Chocolate World Easy Temp: a 3 kg machine for bean-to-bar and small batches

The Easy Temp is Chocolate World's compact 3 kg tempering machine, which Chocolate World lists as suited to bean-to-bar chocolate as well as two-component chocolate.

Chocolate World's specifications: 3 kg of chocolate, air cooling, stainless-steel housing, 230 V single-phase 50/60 Hz, 510 × 510 × 260 mm, 18 kg, and a 2-year warranty. It is made in Belgium. If you make your own chocolate from the bean at home or in a small workshop and have a 230 V supply, it is the 3 kg machine to compare with the MiniTemper.

Pomati T5: continuous tempering in a small footprint

Pomati calls the T5 "the smallest desk tempering machine in continuous": an auger keeps the chocolate moving while you work.

Pomati's datasheet lists a heated 5 kg tank, a double heating circuit for tank and auger, programmable switch-on and switch-off, a removable auger for cleaning and changing chocolate that also reverses to unload, high-precision thermostats, a refrigerating unit with forced-air cooling, and 480 × 450 × 390 mm. Pomati builds it to melt and temper any type of chocolate, for pastry shops, ice cream parlours and food service. A T5 vibrating table is available as an option.

Bilait Adam K6: the small-business machine that grows with you

The Adam K6 is the machine to choose when tempering becomes daily production: it works in a continuous cycle and can later feed an enrober.

Bilait presents it as the most compact machine in its category, for small workshops, pastry shops and restaurants starting with chocolate. With a 6 kg capacity, Bilait states it tempers 20 kg of chocolate in 4.5 hours, up to 45 kg a day, manages any type of chocolate automatically, and has a night cycle to save energy. Included: a heated vibrating table, a removable stainless-steel auger and a stop & go pedal for controlled dosing; Bilait says the reversible pump allows a complete cleaning in 10 minutes. It runs on 230 V, 50/60 Hz (1.5 kW at full capacity) and weighs 67 kg. Optional: automatic dispensers, an enrober designed for the whole Adam line, and a cooling tunnel.

For a business, the numbers that matter are Bilait's: 20 kg tempered in 4.5 hours without someone stirring and seeding by hand, and a 10-minute clean. Compare that with the hours your team spends tempering by hand today.

When you outgrow a countertop machine

When 5–6 kg is no longer enough, the next step is a larger continuous machine with its own vibrating table and dosing pedal.

The Chocolate World CW12 (M1200), for example, has a 12 kg tank and an Archimedes screw delivering up to 45 kg of tempered chocolate per hour, with a heated vibrating table and dosing pedal included. Larger Pomati and Chocolate World machines follow. The Chocolate World CW12, CW24 and CW40 cost $20,299.00–$34,860.00 CAD, depending on model and electrical version.

How AI can help your production

Before you choose, give an AI assistant your weekly volume in kilograms of chocolate, how many chocolates you work per day, and the time your team spends tempering by hand today. Ask it to compare the machines above on capacity and on the manufacturers' own figures, such as Bilait's 20 kg in 4.5 hours, and to estimate the hours a machine could free each week at your own labour cost. Once the machine is in, ask it to turn the manual into a one-page start-up, changeover and cleaning checklist for your team.

AI organises the information; tasting and the final decision stay with your chef.

Frequently asked questions

What is the best chocolate tempering machine for home use?

For automatic tempering on a standard 110 V outlet, the Pavoni MiniTemper: a 5 L / 3 kg bowl, five programmable presets of three stages each, and an interchangeable bowl. If you are comfortable seeding by hand, the Martellato Digital Meltinchoc melts the chocolate, tells you when to seed and holds dark, milk and white at 31, 29 and 28°C for less.

Can I run a chocolate tempering machine on a standard 110 V outlet in Canada?

Yes, if the machine is a 110 V version. Our Pavoni MiniTemper (110 V / 60 Hz) and Martellato Digital Meltinchoc units are. Chocolate World lists the Easy Temp at 230 V, Bilait lists the Adam K6 at 230 V, and Pomati's datasheet lists the T5 at 240 V with special voltages on request. For a 230/240 V machine, have an electrician check your supply before you order.

What is the difference between a chocolate melter and a tempering machine?

A melter such as the Digital Meltinchoc melts the chocolate and holds it at a set temperature; it signals when to seed, but you do the seeding. A tempering machine such as the MiniTemper runs the melt, crystallise and working stages for you and keeps the chocolate tempered for hours.

What is a continuous tempering machine?

A continuous machine keeps the chocolate moving and tempered with an auger, so you can keep working from it without retempering each batch by hand. The Pomati T5 (5 kg) and the Bilait Adam K6 (6 kg) work this way; Bilait states the K6 tempers 20 kg of chocolate in 4.5 hours.

How much does a chocolate tempering machine cost in Canada?

It depends on the type: a digital melter with tempering programs costs far less than an automatic machine, and continuous machines cost more again. Current prices for each machine are on its product page and in the table at the top of this article; orders over $500 CAD get 5% off automatically at checkout.

Do tempering machines qualify for free shipping?

No. Machines are excluded from free shipping, which applies to selected products on orders of $300 CAD or more within Canada. Martellato table-top melters include a free spatula, and customers who bought their machine from Zucchero get 15% off genuine spare parts with code PARTS15.
